MEXICAN MONDAY!!!:)

How were your weekends?  Mine was pretty good.  Pretty busy.  Did really good over the weekend, didn't give in to major overeating.  Yay!  I'm super excited to start the Mexican Monday Post:)  I decided to start with my favorite dish growing up:


Albondigas a.k.a Mexican Meatball Soup

1LB Ground Beef or Turkey

1 egg  1/4c rice(can omit)  1T ground oregano 1/4c finely chopped onion  1/4tsp salt

mix well and make 1oz meatballs 

in a pot spray with olive oil spray or simply add a little bit of oil
add a small can of tomato sauce and water (enough to cover meatballs and veggies) 

add fresh oregano sprigs and mint leaves
once boiling add meatballs, diced/sliced veggies (potatoes, carrots, zucchini)
add 2-3tsp chicken bouillon
cook for 30-40 min on med heat 

Enjoy!


You can eat these with corn tortillas and some rice but if you are trying to cut calories I would avoid the extra rice on the side:/ but do give yourself a treat and eat it with a warm corn tortilla...I did;)
