I'm not exactly sure if this really is a Mexican dish, but my mom is Mexican:) and she used to make it all the time when we were younger.
Pollo a la Mostaza
What you'll need:
- Chicken (I used drumsticks)
- Mustard (enough to cover chicken)
- Salth & pepper (to taste)
- Butter spray/Low cal butter
What you do:
- Mix chicken, mustard, salt and pepper.
- Make sure chicken is covered in the mustard.
- Fry chicken in a little bit of butter (I used 1 Tbsp 60 cal butter) w/skin on.
- Fry till crispy.
- Remove skin off chicken to cut back on the fat & calories.
- Enjoy with a side of rice and salad!
