Pollo a la Mostaza

I'm not exactly sure if this really is a Mexican dish, but my mom is Mexican:) and she used to make it all the time when we were younger.  

Pollo a la Mostaza

What you'll need:
  • Chicken (I used drumsticks)
  • Mustard (enough to cover chicken)
  • Salth & pepper (to taste)
  • Butter spray/Low cal butter
What you do:
  • Mix chicken, mustard, salt and pepper.
  • Make sure chicken is covered in the mustard.
  • Fry chicken in a little bit of  butter (I used 1 Tbsp 60 cal butter) w/skin on.
  • Fry till crispy.
  • Remove skin off chicken to cut back on the fat & calories.
  • Enjoy with a side of rice and salad!
