Chicken Enchiladas







Today I decided to make something I discovered when I married my husband: Chicken Enchiladas with green salsa.  I remember the first time I had them for the first time at his aunt's Christmas party.  Don't get me wrong, I've had enchiladas before, but the way my mom makes (and I love those as well) is with the red salsa and they are completely drenched in oil and totally unhealthy but oh-so-delicious!:D  This one is slightly fried in the oil as well but, I don't do that, which makes them even more healthier:D

Green Chicken Enchiladas



What you need: 
  • Corn tortillas
  • Chicken breast (boiled w/onion, cilantro, and salt)
  • Green enchilada sauce can
  • Shredded Monterrey Jack cheese (low fat)
  • 1/2 tsp. ground cumin
  • Pyrex
What you do:
  • Shred chicken breast.
  • Boil enchilada sauce and add cumin.
  • Warm tortillas in microwave.
  • Assemble enchiladas: tortilla, a little bit of chicken, a little bit of cheese and roll it up.
  • Place neatly in Pyrex.
  • Pour enchilada sauce over enchiladas.
  • Sprinkle Monterrey Jack Cheese over the enchiladas.
  • Cover with foil and place in oven at 300 degrees for about 20 minutes.
  • Enjoy with rice and salad!:)

Pollo a la Mostaza



I'm not exactly sure if this really is a Mexican dish, but my mom is Mexican:) and she used to make it all the time when we were younger.  

Pollo a la Mostaza


What you'll need:
  • Chicken (I used drumsticks)
  • Mustard (enough to cover chicken)
  • Salth & pepper (to taste)
  • Butter spray/Low cal butter
What you do:
  • Mix chicken, mustard, salt and pepper.
  • Make sure chicken is covered in the mustard.
  • Fry chicken in a little bit of  butter (I used 1 Tbsp 60 cal butter) w/skin on.
  • Fry till crispy.
  • Remove skin off chicken to cut back on the fat & calories.
  • Enjoy with a side of rice and salad!

Mexican Monday...on a Thursday:/


I know, I'm late, but better late than never...right?:)  

Ok, I'm doing another favorite of mine growing up.  Hamburger "a la mexicana".  

These can be pretty fattening or pretty healthy so, it depends on how you want them.  These are some ways you can make them healthier and cut back on calories: Use turkey or a 50/50 combo, grill or bake patties, use fat free or light sour cream for the dressing, and instead of regular hamburger buns choose something healthier.    


Hamburger "A la Mexicana"

What you need:
  • 1lb ground beef or Turkey
  • finely chopped onion and cilantro (as much as you want)
  • salt & pepper (to taste)
  • Hamburger buns or Oroweat Thins
  • lettuce, avocado, jalapeno, tomato, onion, cilantro
  • Turkey bacon
  • cheese slice 
  • sour cream & mustard (dressing)

What you do:

  • Mix beef, cilantro, onion, salt & pepper.  Make 4oz patties.  Fry/bake/grill patties.
  • Mix sour cream & mustard (I use more mustard than sour cream to cut calories)
  • Toast your bread. 
  • Build your hamburger.
  • Enjoy!!

MEXICAN MONDAY!!!:)

How were your weekends?  Mine was pretty good.  Pretty busy.  Did really good over the weekend, didn't give in to major overeating.  Yay!  I'm super excited to start the Mexican Monday Post:)  I decided to start with my favorite dish growing up:


Albondigas a.k.a Mexican Meatball Soup

1LB Ground Beef or Turkey

1 egg  1/4c rice(can omit)  1T ground oregano 1/4c finely chopped onion  1/4tsp salt

mix well and make 1oz meatballs 

in a pot spray with olive oil spray or simply add a little bit of oil
add a small can of tomato sauce and water (enough to cover meatballs and veggies) 

add fresh oregano sprigs and mint leaves
once boiling add meatballs, diced/sliced veggies (potatoes, carrots, zucchini)
add 2-3tsp chicken bouillon
cook for 30-40 min on med heat 

Enjoy!


You can eat these with corn tortillas and some rice but if you are trying to cut calories I would avoid the extra rice on the side:/ but do give yourself a treat and eat it with a warm corn tortilla...I did;)
